From one day a week to The Market

Karubees started small. The first version ran one day a week, and the menu was a single plate: curry chicken, white rice and cabbage.1 The Martins opened their first restaurant in Charleston in 2021, then moved to downtown Huntington as more customers came from across the Tri-State area.2,3

Chef Kerry grew up in Jamaica and learned to cook from his grandmother.1 Bina manages the restaurant and runs day-to-day operations.2 Local press has followed them since: WSAZ covered the move to The Market, and WCHS featured them on its Road Trippin' series.2,4

The menu covers the Jamaican classics: jerk chicken, curry chicken, oxtail, curry goat and brown stew chicken, with rice and peas, collard greens, cabbage, baked mac and cheese and fried plantains on the side. Jerk shrimp and other seafood show up too.2,3 The restaurant's site lists its dishes as halal.5

First time? Start with jerk chicken or curry goat, and get rice and peas plus fried plantains on the side. That plate shows what Jamaican home cooking is about: slow-cooked meat, warm spice and something sweet next to it.

Cooking Jamaican at home

Not near Huntington? You can get close at home with a few pantry staples. Jamaican cooks lean on a wet jerk paste (scotch bonnet, allspice, thyme and scallion) for jerk chicken, and on an all-purpose seasoning for stews, rice and peas, and curry. These are the Jamaican seasonings we carry at our store in Chicago:

Rub the jerk paste into chicken and leave it overnight in the fridge before grilling or baking. Use the all-purpose seasoning in place of salt in stews and rice. Start with a little: both are strong.

Assaisonnement jerk jamaïcain Walkerswood

D'un jour par semaine à The Market

Karubees a commencé petit.
