Two Jamaican classics to make at home

Christmas favorite · makes about 2 quarts

Jamaican sorrel drink

1. Rinse 2 cups of dried sorrel and put it in a large pot with a thumb of sliced fresh ginger, 6 pimento (allspice) berries and a cinnamon stick.

2. Pour in 8 cups of boiling water, cover and steep 4 to 6 hours or overnight. Strain, sweeten to taste, add a squeeze of lime and chill. Serve over ice.

Jamaican Irish moss drink

1. Boil a tablespoon of linseed and a small piece of isinglass in 2 cups of water for 10 minutes until it thickens, then strain the gel.

2. Blend the gel with soaked Irish moss (sea moss), milk, a little dissolved gum arabic, nutmeg, vanilla and sweetener. Chill well before serving.

What is sorrel?

Sorrel is the dried red flower of the hibiscus sabdariffa plant. In Jamaica it's steeped with ginger, pimento and cinnamon into sorrel drink, the bright, spiced drink served at Christmas.

How do you make Jamaican sorrel drink?

Steep 2 cups of dried sorrel in 8 cups of boiling water with fresh ginger, pimento (allspice) berries and a cinnamon stick for 4 to 6 hours or overnight. Strain, sweeten, add lime and serve chilled. See the full recipe above.

What is cerasee tea used for?

Cerasee is a very bitter Jamaican bush tea that many families drink as a traditional cleansing tea. Simmer a small handful in water for 5 to 10 minutes, strain and sweeten with honey if you like.

What is soursop leaf tea good for?

Soursop leaf tea is a mild, caffeine-free herbal tea many people enjoy as a calming evening drink. Simmer 3 to 5 leaves in about 4 cups of water for 10 to 15 minutes, then strain.

What is mauby?

Mauby is a bittersweet Caribbean drink made by boiling mauby bark with spices like cinnamon and cloves, then sweetening and serving it over ice. It's especially popular in Trinidad, Barbados and Jamaica.

What is isinglass used for in Jamaica?

In Jamaica, isinglass is a traditional thickener for Irish moss drink, punches and porridge. It's usually boiled with linseed, then strained and blended into the drink.
