Ghana gari (also spelled garri) is cassava that's been grated, fermented, pressed and roasted into dry, crunchy granules. Ghanaian gari is usually white, with a light sour taste and a slightly coarse grain that stays crisp when you soak it. This 2 lb bag is good for a few weeks of gari soakings, eba and gari foto.

How Ghanaians eat gari

  • Gari soakings – cold water, sugar, evaporated milk and roasted groundnuts. The ultimate quick snack.
  • Gari and beans – sprinkled over red red (bean stew) with fried plantain.
  • Eba – stirred into hot water to make a soft swallow for okra, light, palm nut or groundnut soup.
  • Gari foto – mixed into a hot tomato, onion and egg sauce.

How to make gari soakings

  1. Put 3–4 tablespoons of gari in a bowl.
  2. Pour in cold water, swirl, and pour off any bits that float.
  3. Add fresh cold water, sugar to taste and a splash of evaporated milk.
  4. Top with roasted groundnuts and eat right away while it's crunchy.

How to make eba

  1. Boil water and pour about 1 cup into a bowl.
  2. Sprinkle in gari a little at a time until it covers the water, then wait 1 minute.
  3. Stir and fold firmly with a wooden spoon until smooth. Add more gari for firmer eba.

Frequently asked questions

Is gari the same as garri?

Yes. Gari and garri are two spellings of the same roasted cassava granules.

What's the difference between Ghana gari and Ijebu garri?

Both are white cassava gari. Ijebu garri from Nigeria is usually finer and more sour. Ghana gari is a little coarser and milder, and it stays crunchy in soakings.

Is gari gluten free?

Gari is made only from cassava, which has no wheat. Check the bag's label if you need it certified gluten free.

How much is in one bag?

2 lb. Choose 1, 2, 5 or 10 bags above.

How should I store gari?

Keep it in a tightly closed bag or airtight container in a cool, dry place so it stays crisp.
