Bulgur Wheat 4 lb – Madame Gougousse Cracked Bulgur (Blé)

Bulgur wheat is wheat that has been steamed, dried and cracked, so it cooks fast and comes out fluffy with a nutty bite. This is Madame Gougousse cracked bulgur in a 4 lb bag, the brand many Haitian families buy for blé, the bulgur that's cooked like rice and served with sòs pwa (bean sauce), stews and fried fish.

Why people buy it

• Cracked (medium) grain – fluffy and separate, good for pilaf and blé
• Quick to cook – about 15 minutes on the stove
• 4 lb bag – plenty for a family
• Swaps in for rice in most everyday meals

How to cook bulgur wheat

1. Rinse 1 cup of bulgur in a sieve and drain.
2. Warm a little oil in a pot. For Haitian-style blé, fry some onion, garlic, epis or a pinch of thyme first.
3. Add the bulgur and stir for a minute, then add about 2 cups of water or broth and a pinch of salt.
4. Bring to a boil, cover, turn the heat to low and cook about 15 minutes until the water is absorbed.
5. Turn off the heat, keep covered for 5 minutes, then fluff with a fork.

For tabbouleh or salads, just pour boiling water over the bulgur (about 1½ cups water per cup), cover for 20–25 minutes, drain any extra water and let it cool. Package directions come first if they differ.

What to make with it

• Haitian blé with sòs pwa nwa (black bean sauce) or legim
