Yes, the classic West African Maggi cube contains MSG. Nestlé lists monosodium glutamate in it, along with salt, sugar, spices, cassava, corn starch and palm oil.1 The U.S. FDA considers MSG "generally recognized as safe."2 But not every Maggi does: the Maggi Halal Chicken cubes we sell list no MSG at all.3 We read the boxes so you know which is which, plus what the FDA says about MSG, and the gluten and halal answers.
Quick answer
- MSG: yes in the classic cube1; none listed in Maggi Halal Chicken.3
- Is MSG safe? The FDA calls it "generally recognized as safe".2
- Halal: Maggi Halal Chicken is labeled halal on the box.3
- Gluten: no wheat in the two lists we checked, but some Maggi cubes sold elsewhere contain wheat flour, and none of ours say "gluten free".1,3,5
- Salt is the first ingredient in every Maggi cube we checked.1,3
4 quick answers about Maggi cubes
What is in a Maggi cube?
The classic Maggi star cube (the one in the big 100-cube bag). Nestlé Central and West Africa says:1
Nestlé adds that "in some countries, the cube does not contain cassava, but fermented soy beans," so a bag from another country can differ.1 It also says a serving of five cubes (a meal for six) gives over 30% of the daily iodine allowance and 15% of the daily iron.1
Maggi Halal Chicken Flavored Bouillon (made by Nestlé Nigeria). Our box reads:3
| Maggi product | MSG on the label? | Wheat on the label? | Animal ingredient? | Allergen |
|---|---|---|---|---|
| Classic star cube | Yes1 | No1 | None in Nestlé's list1 | Soya lecithin1 |
| Halal Chicken bouillon | No3 | No3 | Chicken fat3 | Soy3 |
| Shrimp (Crevette) cube | Not on the visible panel3 | Not on the visible panel3 | Check the full box | Check the full box |

Is the MSG in Maggi bad for you?
MSG (monosodium glutamate) is a flavor enhancer that gives the "savory" taste. Here is what the U.S. FDA says:2
The FDA has received reports of headache and nausea after eating foods with MSG, but says it was "never able to confirm that the MSG caused the reported effects."2 It mentions mild, short-term symptoms in some sensitive people who take 3 grams or more of MSG without food, and adds that a typical serving of a food with added MSG contains less than 0.5 grams.2
So if MSG doesn't bother you, the classic cube is fine. If you'd rather avoid it, pick Maggi Halal Chicken, which lists none. If you want more of that savory taste, plain MSG is sold as Aji-No-Moto.
Is Maggi halal?
Maggi Halal Chicken Flavored Bouillon is labeled halal: the word HALAL is printed on the box, and the Arabic text on the 504 g pack also reads halal chicken broth.3 That's the one to buy if you cook halal.
Nestlé says Maggi made for some markets is halal: its Middle East site says all Maggi products for Middle East and North Africa consumers come from "carefully selected Halal certified suppliers," and Nestlé Pakistan says Maggi made in Pakistan is "safe and Halal."6 We found no Nestlé page that says the same for the West African cubes. Nestlé's ingredient list for the classic star cube has no meat or animal fat,1 but our photos of the 100-cube bag don't show a halal mark. If you need certified halal, choose the box that says HALAL.
Is Maggi gluten-free?
Neither the classic cube's ingredients (from Nestlé) nor the Halal Chicken box list wheat, barley or rye.1,3 But not all Maggi is wheat-free: Nestlé Professional lists "Wheat Flour (Contains Gluten)" in Maggi Chicken Stock Cubes and wheat flour in Maggi Vegetable Stock Cubes sold in the Middle East.5 So read every pack, and note that none of the Maggi we sell says "gluten free". In the US, that claim means the food has under 20 parts per million of gluten,4 and Maggi doesn't make it on these cubes. If you have celiac disease, treat them as "no gluten ingredients, not certified".

Salt: the number to watch
Salt is the first ingredient in every Maggi cube we checked, so it's the main thing in the cube by weight.1,3 The Maggi Shrimp cube's label says "iodized salt (47.9%)", almost half the cube.3 If you're cutting salt, use fewer cubes and season with onion, pepper, crayfish or herbs instead, and taste before adding more salt to the pot.
