Yes, fufu made from cassava, plantain, cocoyam or yam is naturally gluten-free, because none of those foods contain gluten.1 The catch is the bag. We read the labels on the instant fufu flours we sell and found something most shoppers never notice: "plantain fufu" is usually plantain mixed with potato and cassava, and some swallows sold next to fufu, like semolina, are made from wheat.2 Here's what each label actually says.

Quick answer

  • Cassava, plantain, cocoyam and yam fufu: gluten-free by nature.1
  • None of the 4 fufu labels we checked list wheat. Mama's Choice prints "Gluten Free" on the pack.
  • Semolina (semo), Semovita and "wheat swallow" contain gluten.2
  • Oat fufu: oats are often cross-contaminated with wheat, so celiacs should look for "gluten-free oats".1
  • In the US, "gluten-free" on a label means under 20 parts per million of gluten.3

The short answer: real fufu has no gluten

Gluten is a protein found in wheat, barley and rye.1 Fufu is a soft dough made by boiling and pounding (or stirring) starchy foods: cassava and/or plantain or cocoyam in Ghana, fermented cassava in Nigeria, and yam, cassava, plantain or taro in Ivorian foutou.5 None of these contain gluten, so homemade fufu and pounded yam are gluten-free.

Instant fufu flour is where you need to look closer. It's a factory mix, and mixes can contain anything the maker adds. That's why "is fufu gluten free" is a fair question, and why the label is the only real answer.

What the labels say: plantain fufu is not just plantain

We photographed and read the ingredient lines on the instant fufu we sell in Chicago. Ingredients are listed in label order.

Fufu flour Ingredients on the label Wheat listed? "Gluten free" on pack?
Neat Plantain Fufu Plantain 60%, granular potato 30% ("added to protect flavour"), cassava 10%, colours E102 and E110 No Not printed
Tropiway Plantain Fufu Mashed plantain, potato granules, cassava, saffron & turmeric; preservative sodium acid pyrophosphate; stabilizer monodiglycerides; antioxidant BHT No Not printed on the panels we read
Mama's Choice Plantain Cassava, plantain, potato granules, vitamins & minerals No Yes
Mama's Choice Cocoyam Cassava, cocoyam, potato granules, purple carrot powder, vitamins & minerals No Yes
Asiko Poundo Yam Potato granules and yam, with sodium bisulphite (a sulfite) No Not printed

Three things stand out. Potato is in all five. Mama's Choice "Plantain" lists cassava first, so there's more cassava than plantain in it. And Neat uses two artificial colours (E102 tartrazine and E110 sunset yellow), while Tropiway uses saffron and turmeric. If you react to sulfites, note the sodium bisulphite in Asiko poundo.

None of this makes them bad: potato and cassava help the flour stir smooth and stretchy. But if you buy "plantain fufu" because you want only plantain, read the side of the box.

Sugar and potassium: two numbers worth checking

The labels also answer two questions people ask about fufu. For calories, carbs and a full nutrition table, see fufu calories and nutrition facts.

0 g sugarEvery label that lists sugar shows 0 g, with no added sugar. Fufu isn't sweet; it tastes of the soup.
Mostly starchFufu is mainly carbohydrate. If you watch carbs or blood sugar, the portion size matters more than the brand. See the numbers →
895-990 mgpotassium per label serving in Mama's Choice (150 g plantain, 100 g cocoyam). That's high: people on a low-potassium diet for kidney disease should ask their doctor or dietitian.4

How to check any fufu bag in 30 seconds

  1. Find the ingredient line, usually on the side or bottom of the box.
  2. Look for wheat, semolina, barley, rye or "flour" with no plant named. Any of these means gluten.1
  3. Look for "gluten free". In the US that means under 20 ppm of gluten.3
  4. Oats? Only safe for celiacs if the oats are labeled gluten-free.1
  5. Check potassium if you're on a kidney diet; it's on the Nutrition Facts panel.4
